Easy Paleo Sunrise bowl.
Breakfast bowls are the easiest way to say, I want a bunch of flavors and one bowl to wash. Here is my one (ish) pan wonder.
Potatoes, eggs, cheese, oh my! I just think its a great morning when you can chop a few ingredients and put it into the oven. This recipe takes less than 30 minutes and is a great weekend brunch especially when you’re wanting to be lazy.
Here’s what you need: red onion, baby potatoes, cherry tomatoes and eggs— the ratio will depend on how many people you want to feed. I also used Seite Nacho Cheese and Yellowbird Hotsauce. The reason I called this a one pan ish wonder is because you might prefer to fry your eggs separately but if you like runny eggs, I like to use these little ramekins. You can crack your egg right into them and put them on your cookie sheet! My other tip is USE PARCHMENT PAPER to roast your veggies on. Zero clean up and the sell compostable ones. Heat your oven to 350 degrees while you chop your veggies. Spray them with avocado oil (heat stable) and put your eggs on the sheet if you’re baking them and pop them into the oven for 25 minutes, TAKE THE EGGS OUT at 13 minutes. I put this in caps because I am neurodivergent and I know some of y’all glazed right over it.
When its done, heat up your Siete Nacho cheese and drizzle it over your assembled bowl! You can also put pickled jalapeños and salsa or regular cheese if you’re not dairy free.
